OUR WINES
Mud House Waipara Riesling 2010
Our winemaking is a simple affair...we want the fruit flavours to shine, not the winemaking. After picking in the cool of the night and gently pressing, the individual parcels are fermented at warm temperatures with specially selected yeast strains. When the balance of the wine is just right, the tank is chilled and remains on light yeast lees for 3 months. The tank is then racked and blended and fined using natural methods before bottling.
