This single vineyard wine was solely sourced from our vineyard in the Bendigo sub-region of Central Otago. The vineyard's free draining loam soils over schist gravel make it a natural home for growing outstanding Pinot Noir. The huge diurnal temperature variation adds to the structure and concentration of the wine.
<p>Central Otago had a top growing season in 2012 compared to the rest of New Zealand which struggled with unsettled cool weather. Our Bendigo vineyard was blessed with warm stable weather from late spring to harvest in early March, keepnig the disease pressure low. The fruit was able to slowly develop through the season, with harvest commencing when the grapes reached optimum ripeness.</p>
<p>100% Pinot Noir</p>
<p>Harvest commenced on the 4th March in Bendigo. The grapes were gently destemmed, allowing whole berries to remain intact. After a week long cold soak, every parcel was fermented seperately, with a combination of wild and cultured yeasts. Each batch was individually hand plunged to extract the vibrant colour, flavour and delicate tannin structure. The parcels were then pressed seperately to a mix of French oak barriques and stainless steel tanks. In the spring after completing malolactic fermentation, each parcel was tasted and blended prior to bottling.</p>
